Eating a vegetarian diet is a crucial part of living a zero waste lifestyle.  According to the Water Education Foundation, it takes 2,464 gallons of water to produce one pound of beef in California, the equivalent to taking a 7 minute shower every day for six months.  Food waste disposal also plays a major role in our environmental impact, with Americans disposing of 40-50% of their food.
