Kale Sweet Potato Salad

Serves 4

2 sweet potatoes
2 bunches of kale, torn into pieces (we used a mix of curly kale and lacinato kale)
Dried blueberries
Pecans
Salt and pepper to taste

Dressing
Balsamic Vinegar
Minced garlic
4 stalks basil, finely chopped
Olive Oil
Salt and pepper to taste

Tear kale into bite sized pieces.
Peel sweet potatoes and steam. Once cool, cut into bite sized pieces.
To prepare the dressing, mince the garlic and basil and combine with vinegar, oil, and salt and pepper. Pour over salad, tossing to coat the leaves. Top with potatoes, blueberries, pecans and a little more dressing.  Serve while sweet potatoes are hot.
